History

A post office called Somerset opened here in 1884. When the Burlington built through in 1886, the Lincoln Land Company bought the townsite and named it for P. S. Eustis, a Burlington passenger agent, and the post office took the new name; the village was incorporated in 1888. Settled largely by Germans, Eustis was named the “Sausage Capital of Nebraska” by a 1993 legislative resolution and celebrates Wurst Tag on the second Saturday of June. Two prominent Nebraskans were born here: Ralph G. Brooks (1898–1960), governor from 1959 until his death in office, and Clayton Yeutter (born 1930), U.S. Trade Representative and Secretary of Agriculture from 1989 to 1991. The village peaked at 497 people in 1930.
